Thai Red Curry Salmon

Red curry pairs really well with grilled salmon and the combination of flavours in this dish will definitely brighten up all your taste buds. If you're looking for something to spice up your dinners, this is it!

  1. start with the sauce, it can keep warm with the lid on while your salmon finishes cooking on the skillet
  1. 4-6 fillets salmon
  2. pinch salt & pepper
  1. clean salmon, leaving skin on
  2. season with salt & pepper
  1. heat cast iron grill/skillet on med-high
  2. oil/butter as necessary
  3. grill skin side first, ~6-8 mins
  4. flip & grill top side ~4-6 minutes
  5. grill each additional side until salmon is cooked through
  1. serve salmon with Thai red curry sauce alongside your main dish

Notes

  1. if you like your salmon less well-done, reduce the cooking time on each side by about 1/3 the duration
