A guilt-free homemade sauce using minimal ingredients but packs in all the right flavours. Perfect for burgers, sandwiches ... just about anything that needs a healthy flavour boost! Great alternative to pizza sauce, too!

6 sweet peppers, red, yellow, orange
preheat broiler to high & line baking sheet with parchment paper
cut peppers in 1/2 lengthwise
remove stems & seeds
arrange cut side down
broil 30 mins, turn oven off and leave inside another 20 mins
remove from oven & when cool enough, remove skin
try to reserve released liquids if possible
2 tbspoil
2-3 red onions, chopped
4-8 clovesgarlic, chopped
heat oil in a saucepan over med high heat
add onions & half the garlic
cook until softened - few mins
1 cupwater
2 tbspfish sauce
add to saucepan, along with roasted peppers
bring to a small boil, lower heat & simmer ~6-8 mins
remove from heat
1 tspblack pepper, ground
when cooled, add freshly ground pepper to taste & remaining garlic
transfer to a 1L mason jar & blend well using a hand blender
Notes
if you like things sweeter, add 1-2 tsp sugar before blending - although the peppers should be naturally sweet enough on their own
if you don't want to use fish sauce, replace water with vegetable stock instead
this recipe is easily halved & can be stored in the fridge for up to a week
