Roasted Pepper Sauce

A guilt-free homemade sauce using minimal ingredients but packs in all the right flavours. Perfect for burgers, sandwiches ... just about anything that needs a healthy flavour boost! Great alternative to pizza sauce, too!

  1. 6 sweet peppers,
    red, yellow, orange
  1. preheat broiler to high & line baking sheet with parchment paper
  2. cut peppers in 1/2 lengthwise
  3. remove stems & seeds
  1. arrange cut side down
  2. broil 30 mins, turn oven off and leave inside another 20 mins
  3. remove from oven & when cool enough, remove skin
  4. try to reserve released liquids if possible
  1. 2 tbsp oil
  2. 2-3 red onions, chopped
  3. 4-8 cloves garlic, chopped
  1. heat oil in a saucepan over med high heat
  2. add onions & half the garlic
  3. cook until softened - few mins
  1. 1 cup water
  2. 2 tbsp fish sauce
  1. add to saucepan, along with roasted peppers
  2. bring to a small boil, lower heat & simmer ~6-8 mins
  3. remove from heat
  1. 1 tsp black pepper, ground
  1. when cooled, add freshly ground pepper to taste & remaining garlic
  2. transfer to a 1L mason jar & blend well using a hand blender

Notes

  1. if you like things sweeter, add 1-2 tsp sugar before blending - although the peppers should be naturally sweet enough on their own
  2. if you don't want to use fish sauce, replace water with vegetable stock instead
  3. this recipe is easily halved & can be stored in the fridge for up to a week
